
GIUAN ... Giovanni...I wanted to honour my father’s memory by naming after him one of our wines; he taught me to appreciate small things... in fact, this mouldy wine is somewhat incredible because it is made from those grapes that once upon a time were discarded, and when pressed they stun the onlooker for their yield, 7-8 litres per 100 kg of freshly picked grapes.
A jewel of a wine that passion has turned into a product of quite distinct personality; this reflects the Estates commitment to amaze those who savour its sweet nectars.
Denomination: Mouldy Raisin IGT MARCHE BIANCO white wine
Wine-Making and Processing: The grapes are strung up in individual bunches and over 4-6 months in rooms where, from time to time, the fireplace is lit for smoking. Some bunches, or even individual berries are, in specific years and peculiar conditions, infected by Grey Mould. These are selected manually selected and pressed separately with a maximum yield of 10% of the harvest. The outcome is unique nectar that seeps in 110 litre demi-barriques for 60 months before reaching its peak. The unfiltered result is then bottled.

Annual Production: 500ml bottles
Colour: Deep amber.
Perfume: Intense, complex, yellow fruit, ripe compote, traces of spices.
Flavour: Sweet, pleasantly balanced, constant.
Serving Suggestions: medium-size goblets, 14°C, best after airing.
Goes well with: excellent by itself, dry sweets, fruit jam-tarts, cheese.
